Instructions
- Begin by rinsing your blueberries under cold water if they’re fresh. If using frozen ones, there’s no need to thaw them; they can go straight into the pot.
- In a medium saucepan over medium heat, mix the blueberries with the granulated sugar, lemon juice, and a pinch of salt. Stir gently to combine the ingredients, and keep an eye on them as they heat up.
- As the mixture heats, the blueberries will start to release their juices, creating a beautiful, deep purple syrup. Let this simmer for 5-10 minutes, stirring occasionally. You’ll notice the compote thickening as it cooks.
- If you prefer a thicker compote, dissolve the cornstarch in water in a small bowl. Gradually add this mixture to the bubbling blueberries, stirring continuously. Allow it to cook for an additional minute or two until it reaches your desired consistency.
- Remove from heat and stir in the vanilla extract. This simple addition of flavor brings everything together beautifully. Allow the compote to cool for a few minutes before transferring it to a serving dish or a jar.
