Margarita Grilled Shrimp Skewers

Description

Succulent shrimp marinated in a zesty tequila-lime marinade and grilled to perfection. These restaurant-quality skewers bring the flavors of your favorite cocktail to the dinner table.


Ingredients

  • 2 pounds large shrimp, peeled and deveined
  • 1/3 cup fresh lime juice
  • 1/4 cup tequila
  • 2 tablespoons orange liqueur (Triple Sec or Cointreau)
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 4 cloves fresh garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lime wedges for serving
  • 810 wooden or metal skewers

Instructions

  1. 1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. 2. In a large bowl, whisk together lime juice, tequila, orange liqueur, olive oil, and honey until well combined.
  3. 3. Add minced garlic, chopped cilantro, cumin, chili powder, salt, and pepper to the marinade and stir thoroughly.
  4. 4. Pat shrimp dry with paper towels and add to the marinade, tossing to coat evenly.
  5. 5. Cover and refrigerate for 30 minutes to 2 hours, turning occasionally.
  6. 6. Preheat grill to medium-high heat (375-400°F) and oil the grates well.
  7. 7. Thread marinated shrimp onto skewers, piercing through both tail and head sections to create a C-shape.
  8. 8. Place skewers on the preheated grill and cook for 2-3 minutes per side until shrimp turn pink and opaque with visible grill marks.
  9. 9. Remove from grill when shrimp are cooked through but still tender, not rubbery.
  10. 10. Squeeze fresh lime juice over the skewers and serve immediately with additional lime wedges.

Notes

Store leftover shrimp (removed from skewers) in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or enjoy cold over salads. The marinade can be prepared 2 days in advance. Do not marinate shrimp longer than 2 hours as the citrus will begin to cook the seafood. For best results, let skewers sit at room temperature for 15 minutes before grilling.
