Marinated Zaatar Bean Salad

Ingredients

  • 2 cups canned beans (drained and rinsed)

  • 2 tbsp za’atar spice blend

  • 1/4 cup olive oil

  • Juice of 1 lemon

  • 1/2 cucumber, chopped

  • 1/2 cup cherry tomatoes, halved

  • 1/2 red onion, sliced

  • 2 tbsp chopped fresh parsley or mint

  • Salt and pepper to taste


Instructions

  • In a large bowl, whisk together olive oil, lemon juice, and za’atar.

  • Add beans and toss gently to coat. Let marinate for 30–60 minutes.

  • Add cucumbers, tomatoes, onions, and herbs.

  • Toss everything lightly, season to taste, and serve chilled or at room temperature.

  • Cook Time: 30–60 minutes
