Ingredients

2 cups canned beans (drained and rinsed)
2 tbsp za’atar spice blend
1/4 cup olive oil
Juice of 1 lemon
1/2 cucumber, chopped
1/2 cup cherry tomatoes, halved
1/2 red onion, sliced
2 tbsp chopped fresh parsley or mint
Salt and pepper to taste
Instructions
In a large bowl, whisk together olive oil, lemon juice, and za’atar.
Add beans and toss gently to coat. Let marinate for 30–60 minutes.
Add cucumbers, tomatoes, onions, and herbs.
Toss everything lightly, season to taste, and serve chilled or at room temperature.
