Marshmallow-Surprise Hot Cocoa Cookies are soft chocolate cookies made with hot cocoa mix and filled with a gooey marshmallow center. They’re easy, cozy, and perfect for sharing.

- 1 ½ cups all-purpose flour
- ¼ cup unsweetened cocoa powder
- 1 packet hot cocoa mix
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 10–12 large marshmallows, halved
Instructions
- Preheat oven to 350°F and line baking sheets.
- Mix dry ingredients in one bowl and wet ingredients in another. Combine.
- Wrap dough around marshmallow halves and seal completely.
- Bake 9–11 minutes until edges are set. Cool slightly and serve.
Notes
- Seal dough well to keep marshmallow inside.
- Slightly underbake for soft centers.
