- 2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks
- 1/2 cup unsalted butter
- 3/4 cup whole milk
- 1/4 cup sour cream (optional)
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh chives (optional)
Instructions
- Place potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.
- Simmer for 15-20 minutes until tender.
- Drain potatoes and return to the pot. Let them sit for a minute to steam.
- Mash the potatoes with a potato masher or ricer.
- Stir in the butter, milk, and sour cream (if using). Season with salt and pepper.
- Garnish with fresh chives and serve warm.
