Description

A fresh and healthy Mediterranean Chickpea Salad with chickpeas, cucumbers, tomatoes, parsley, and a lemon-olive dressing. Perfect for lunch, dinner, or meal prep.


Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • 2 tbsp parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ cup kalamata olives, sliced
  • Optional: ¼ cup feta cheese, crumbled

Instructions

  • Drain and rinse chickpeas, dice vegetables, and place in a large bowl.
  • Whisk olive oil, lemon juice, salt, and pepper in a small bowl; pour over vegetables and chickpeas.
  • Toss gently, sprinkle parsley, and add optional olives or feta. Serve immediately or chill for later.
