A fresh and healthy Mediterranean Chickpea Salad with chickpeas, cucumbers, tomatoes, parsley, and a lemon-olive dressing. Perfect for lunch, dinner, or meal prep.

- 2 cups canned chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- 2 tbsp parsley, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
- Optional: ¼ cup kalamata olives, sliced
- Optional: ¼ cup feta cheese, crumbled
Instructions
- Drain and rinse chickpeas, dice vegetables, and place in a large bowl.
- Whisk olive oil, lemon juice, salt, and pepper in a small bowl; pour over vegetables and chickpeas.
- Toss gently, sprinkle parsley, and add optional olives or feta. Serve immediately or chill for later.
Notes
- Salad keeps well in the fridge for up to 3 days. Add delicate toppings just before serving.
