Ingredients

- 8 large Flour or Whole Wheat Tortillas
- 1 cup Feta Cheese, crumbled
- 1 cup Mozzarella Cheese, shredded
- 2 cups Spinach, fresh
- ½ cup Olives, sliced
- 1 cup Roasted Red Peppers, sliced
- 1 cup Artichoke Hearts, quartered
- 2 cloves Garlic, minced
- ½ Red Onion, finely chopped
- 2 tablespoons Olive Oil
- 1 teaspoon Dried Oregano
- Salt and Pepper, to taste
Instructions
- Start by heating 1 tablespoon of olive oil in a large skillet over medium heat. Toss in the minced garlic and chopped red onion. Sauté for about 2 minutes until fragrant and translucent.
- Add the fresh spinach to the skillet and cook until wilted, approximately 3 minutes. Stir in sliced olives, roasted red peppers, and artichoke hearts. Season with oregano, salt, and pepper.
- Lay a tortilla flat in another skillet over medium heat. Sprinkle half with shredded mozzarella and crumbled feta cheese. Spoon sautéed filling on top and add more mozzarella.
- Carefully fold the tortilla over, creating a half-moon shape. Cook for about 3-4 minutes on each side until golden brown and cheese is melted.
- Transfer the quesadilla to a cutting board to cool slightly before cutting into wedges. Repeat the process for remaining tortillas and filling.
Notes
Serve warm with tzatziki or hummus. You can customize the filling with additional vegetables or proteins as desired.
