Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, mix the chocolate cookie crumbs, sugar, and melted butter until well combined. Press this mixture evenly into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes. Remove from oven and allow it to cool.
- Make the filling: In a large mixing bowl, whisk together the granulated sugar, cocoa powder, and all-purpose flour until evenly combined. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, melted chocolate chips, and heavy cream until smooth.
- Assemble the pie: Pour the filling into the cooled crust, spreading it out evenly. Bake the pie for about 30 minutes, or until the filling is set but jiggles slightly in the center. Keep an eye on it to avoid over-baking.
- Cool down: Once baked, remove it from the oven and let it cool at room temperature. Afterward, refrigerate for at least 2 hours to ensure it’s fully set.
- Add the toppings: When you’re ready to serve, spread a generous layer of whipped cream on top. Optionally, sprinkle with crushed pecans or walnuts and garnish with chocolate shavings or a light dusting of cocoa powder.
