Ingredients

  • 2 cups rolled oats
  • 1 cup creamy almond or peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Begin by grabbing a mixing bowl. Combine the rolled oats, honey (or maple syrup), almond butter, cocoa powder, and vanilla extract. Mix well until all ingredients are thoroughly combined.
  2. Once your mixture is combined, you can add a pinch of salt and the chocolate chips, stirring gently to distribute them evenly.
  3. Line an 8×8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Pour the oat mixture into the dish and press it down firmly with a spatula.
  4. Place the dish in the refrigerator and let it chill for about 30 minutes.
  5. Once chilled, remove from the fridge and lift out the bars using the parchment overhang. Cut into squares or rectangles.
  6. Enjoy immediately or store them for later!
