Ingredients

  • 1/2 cup natural peanut butter (or almond butter for a nut-free version)
  • 1/2 cup honey (or maple syrup for a vegan option)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup chocolate chips (dark, semi-sweet, or dairy-free)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Optional: 1/4 cup chopped nuts (like walnuts or almonds)
  • Optional: 1/4 cup shredded coconut

Instructions

  1. In a large mixing bowl, combine the rolled oats, cocoa powder, and salt.
  2. In another bowl, mix the peanut butter and honey until smooth and creamy.
  3. Pour the wet mixture over the dry ingredients, add in the vanilla extract, and mix until well-coated.
  4. Line an 8×8-inch baking dish with parchment paper and transfer the mixture into the dish, pressing down firmly.
  5. Cover with plastic wrap or foil and refrigerate for at least 30 minutes.
  6. After chilling, remove the bars from the dish, slice them, and serve.
