- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup chicken broth or vegetable broth
- ½ cup heavy cream
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes
- Salt and pepper to taste
- 2 cups fresh spinach
- Fresh parsley, chopped (for garnish)
- Optional: Lemon wedges for serving
Instructions
- Begin by heating the olive oil in a large pot or deep skillet over medium heat. Once hot, toss in the minced garlic, letting it sizzle for about 30 seconds.
- Next, add the shrimp to the pot. Season them with salt, pepper, and red pepper flakes. Cook until the shrimp turns pink, approximately 3 to 4 minutes.
- Once the shrimp is cooked, remove it from the pot and set it aside. In the same pot, add the cherry tomatoes and orzo, followed by the chicken or vegetable broth. Bring the mixture to a gentle simmer.
- Stir in the heavy cream and Italian seasoning. Let the orzo cook, stirring occasionally, for about 10 minutes.
- When the orzo is nearly cooked through, add the spinach and the shrimp back into the pot. Stir until the spinach wilts.
- Taste your creation and adjust the seasoning as needed. Then, remove from heat.
- Serve the dish hot, garnished with parsley and lemon wedges on the side.
Notes
Consider using whole wheat orzo for added fiber or swapping heavy cream for a non-dairy option for a lighter dish.
