- 2 cups orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook orzo until al dente, drain, and rinse under cold water.
- Chop vegetables and herbs; combine in a large mixing bowl with orzo.
- Drizzle with olive oil and lemon juice; season with salt and pepper. Toss gently.
- Chill in the refrigerator for 30 minutes before serving.
Notes
Add grilled chicken, shrimp, or chickpeas for protein. Store in an airtight container in the fridge for up to three days.
