Description

Fluffy, flavorful, and versatile Oven-Baked Veggie Frittata made with fresh vegetables. Perfect for breakfast, brunch, or light dinner.


Ingredients

  • 8 large eggs
  • ¼ cup milk (whole or 2%)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup bell peppers, chopped
  • ½ cup onion, chopped
  • 1 cup spinach, roughly chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • Optional: mushrooms, zucchini, cooked turkey bacon, feta cheese (½–1 cup)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9-inch skillet or baking dish. Whisk eggs and milk; stir in veggies and cheese.
  2. Pour mixture into dish and bake 25–30 minutes until set and golden. Test with a knife in the center.
  3. Let cool 5 minutes, slice, garnish with herbs, and serve warm. Leftovers can be stored and reheated.
