- 8 large eggs
- ¼ cup milk (whole or 2%)
- 1 tsp salt
- ½ tsp black pepper
- 1 cup bell peppers, chopped
- ½ cup onion, chopped
- 1 cup spinach, roughly chopped
- ½ cup cherry tomatoes, halved
- ½ cup shredded cheese (cheddar, mozzarella, or your choice)
- Optional: mushrooms, zucchini, cooked turkey bacon, feta cheese (½–1 cup)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9-inch skillet or baking dish. Whisk eggs and milk; stir in veggies and cheese.
- Pour mixture into dish and bake 25–30 minutes until set and golden. Test with a knife in the center.
- Let cool 5 minutes, slice, garnish with herbs, and serve warm. Leftovers can be stored and reheated.
