- 4 cups fresh peaches, peeled and sliced (or canned peaches, drained)
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
- Combine the peaches with sugar, lemon juice, cornstarch, and vanilla extract in a bowl. Toss gently.
- Mix flour, oats, brown sugar, cinnamon, and salt in another bowl. Pour in melted butter and stir into a crumbly mixture. Reserve about 1 cup for topping.
- Press the remaining mixture evenly into the bottom of your prepared baking dish.
- Bake the crust for 15 minutes or until lightly golden.
- Beat cream cheese with powdered sugar until smooth. Add egg and vanilla extract, mixing until combined.
- Pour peach filling over the crust, drizzle cheesecake mixture on top, and create swirls. Sprinkle with reserved oat mixture.
- Return the dish to the oven and bake for 25 to 30 minutes until the cheesecake is set and topping is golden brown.
- Cool completely in the pan, lift out, slice into squares, and serve.
Notes
These bars are best enjoyed chilled. For a twist, try adding blueberries or raspberries.
