Ingredients

  • 4 cups fresh peaches, peeled and sliced (or canned peaches, drained)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. Combine the peaches with sugar, lemon juice, cornstarch, and vanilla extract in a bowl. Toss gently.
  3. Mix flour, oats, brown sugar, cinnamon, and salt in another bowl. Pour in melted butter and stir into a crumbly mixture. Reserve about 1 cup for topping.
  4. Press the remaining mixture evenly into the bottom of your prepared baking dish.
  5. Bake the crust for 15 minutes or until lightly golden.
  6. Beat cream cheese with powdered sugar until smooth. Add egg and vanilla extract, mixing until combined.
  7. Pour peach filling over the crust, drizzle cheesecake mixture on top, and create swirls. Sprinkle with reserved oat mixture.
  8. Return the dish to the oven and bake for 25 to 30 minutes until the cheesecake is set and topping is golden brown.
  9. Cool completely in the pan, lift out, slice into squares, and serve.

Notes

These bars are best enjoyed chilled. For a twist, try adding blueberries or raspberries.
