Description

  • 3/4 cup granulated sugar (for filling)
  • 2 tablespoons all-purpose flour (for filling)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour (for topping)
  • 1 cup granulated sugar (for topping)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Preheat oven to 350 degrees Fahrenheit.
  2. 2. In a large bowl, toss peach slices with 3/4 cup sugar, 2 tablespoons flour, cinnamon, and lemon juice. Let sit for 10 minutes.
  3. 3. Pour melted butter into a 9×13-inch baking dish, ensuring it covers the bottom.
  4. 4. In a separate bowl, whisk together 1 cup flour, 1 cup sugar, baking powder, and salt.
  5. 5. Add milk and vanilla extract to dry ingredients, stirring until just combined. Do not overmix.
  6. 6. Pour batter over the melted butter in the baking dish. Do not stir.
  7. 7. Spoon peach mixture evenly over the batter. Do not stir.
  8. 8. Bake for 45 to 55 minutes until golden brown and a toothpick inserted into the topping comes out clean.
  9. 9. Let cool for 15 minutes before serving warm with vanilla ice cream or whipped cream.

Notes

Store covered in refrigerator for up to 4 days. Reheat in 325-degree oven for 15-20 minutes. Can be frozen for up to 3 months. Works with fresh, frozen, or canned peaches.
