- 2 ripe bananas
- 1/2 cup peanut butter
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar
- 2 large eggs
- 1/3 cup milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Optional: chocolate chips, chopped nuts, oats, shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Line muffin tin with liners. Mash bananas and mix with peanut butter, eggs, milk, and vanilla.
- In a separate bowl, combine flour, baking powder, baking soda, salt, sugar, and cinnamon. Fold into wet mixture. Add optional add-ins.
- Spoon batter into muffin tin and bake 18–22 minutes until golden and a toothpick comes out clean. Cool slightly before serving.
