Description

Soft, moist, and delicious muffins made with bananas and peanut butter. Perfect for breakfast, snacks, or a sweet treat anytime.


Ingredients

  • 2 ripe bananas
  • 1/2 cup peanut butter
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Optional: chocolate chips, chopped nuts, oats, shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin tin with liners. Mash bananas and mix with peanut butter, eggs, milk, and vanilla.
  2. In a separate bowl, combine flour, baking powder, baking soda, salt, sugar, and cinnamon. Fold into wet mixture. Add optional add-ins.
  3. Spoon batter into muffin tin and bake 18–22 minutes until golden and a toothpick comes out clean. Cool slightly before serving.
