  • 2 tablespoons of honey or brown sugar
  • 1 tablespoon of cornstarch
  • 2 tablespoons of vegetable oil (or olive oil)
  • Salt and pepper, to taste
  • 1/2 teaspoon of crushed red pepper flakes (optional)
  • Green onions and sesame seeds for garnishing (optional)

Instructions

  1. Marinate the chicken: In a large bowl, mix together the soy sauce, honey, and minced garlic. Add the chicken pieces, coating them well. Let them marinate for at least 15 minutes.
  2. Prepare the sauce: In a small bowl, whisk together the cornstarch with a tablespoon of water until smooth.
  3. Sauté the vegetables: Heat vegetable oil in a large skillet over medium-high heat. Add the chopped onion and bell pepper, stirring for about 3-4 minutes until they start to soften.
  4. Cook the chicken: Add the marinated chicken to the skillet, cooking until the chicken is browned and cooked through, about 8-10 minutes.
  5. Add pineapple and sauce: Stir in the pineapple chunks and the sauce mixture. Cook for another 3-4 minutes, until everything is heated through.
  6. Thicken the sauce: Keep stirring until the sauce has thickened to your liking.
  7. Season and serve: Taste, then season with salt, pepper, and red pepper flakes (if using). Serve immediately, garnished with green onions and sesame seeds if desired.
