Description
Tender chicken with sweet pineapple chunks served over fluffy rice. Quick, flavorful, and family-friendly, perfect for weeknights or gatherings.

- 1 lb chicken breasts or thighs, cut into bite-sized pieces
- 1 ½ cups white rice
- 1 cup pineapple chunks, drained
- ¼ cup soy sauce (low-sodium optional)
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 medium bell pepper, optional, diced
- 1 tbsp vegetable oil
- Salt & pepper, to taste
- 2 green onions, optional, for garnish
Instructions
- Marinate chicken with soy sauce, brown sugar, and garlic for 10–15 minutes. Dice onions and bell pepper, drain pineapple.
- Cook rice according to package directions. In a skillet, cook chicken until golden and cooked through. Remove and set aside. Sauté onions, bell pepper, and pineapple until fragrant.
- Return chicken to skillet, toss with pineapple mixture, cook 1–2 minutes more. Serve over rice and garnish with green onions.
Notes
- Use fresh or thawed pineapple, drain excess liquid.
- Adjust sweetness or tanginess to taste with honey or lime.
- Can freeze cooked chicken and rice separately for up to 2 months.
