Description

Tender chicken with sweet pineapple chunks served over fluffy rice. Quick, flavorful, and family-friendly, perfect for weeknights or gatherings.


Ingredients

  • 1 lb chicken breasts or thighs, cut into bite-sized pieces
  • 1 ½ cups white rice
  • 1 cup pineapple chunks, drained
  • ¼ cup soy sauce (low-sodium optional)
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 medium bell pepper, optional, diced
  • 1 tbsp vegetable oil
  • Salt & pepper, to taste
  • 2 green onions, optional, for garnish

Instructions

  1. Marinate chicken with soy sauce, brown sugar, and garlic for 10–15 minutes. Dice onions and bell pepper, drain pineapple.
  2. Cook rice according to package directions. In a skillet, cook chicken until golden and cooked through. Remove and set aside. Sauté onions, bell pepper, and pineapple until fragrant.
  3. Return chicken to skillet, toss with pineapple mixture, cook 1–2 minutes more. Serve over rice and garnish with green onions.

Notes

  • Use fresh or thawed pineapple, drain excess liquid.
  • Adjust sweetness or tanginess to taste with honey or lime.
  • Can freeze cooked chicken and rice separately for up to 2 months.
