- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons pink lemonade powder
- Pink lemonade jam or filling (homemade or store-bought)
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar until fluffy.
- Mix in the egg and vanilla until smooth.
- In another bowl, whisk flour, baking powder, salt, and pink lemonade powder.
- Add dry ingredients to the wet mixture, stirring until a soft dough forms.
- Roll tablespoon-sized dough balls and place them on the baking sheet.
- Press a thumbprint or teaspoon into the center of each dough ball.
- Fill each indentation with pink lemonade jam.
- Bake for 10–12 minutes, until edges are lightly golden.
- Cool on the baking sheet for 5 minutes, then move to a rack to cool completely.
- Dust with powdered sugar if desired.
