Description

These Pink Lemonade Thumbprint Cookies are soft, buttery, and filled with a tangy pink lemonade center. They’re easy to make, family-friendly, and perfect for summertime gatherings, dessert tables, or gifting.


Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons pink lemonade powder
  • Pink lemonade jam or filling (homemade or store-bought)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream butter and sugar until fluffy.
  3. Mix in the egg and vanilla until smooth.
  4. In another bowl, whisk flour, baking powder, salt, and pink lemonade powder.
  5. Add dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Roll tablespoon-sized dough balls and place them on the baking sheet.
  7. Press a thumbprint or teaspoon into the center of each dough ball.
  8. Fill each indentation with pink lemonade jam.
  9. Bake for 10–12 minutes, until edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes, then move to a rack to cool completely.
  11. Dust with powdered sugar if desired.
