1 cup raw, shelled pistachios (peeled)
½ cup white chocolate (chopped)
2 tbsp unsalted butter
¼ cup whole milk (or cream)
2 tbsp powdered sugar
Pinch of salt
Optional: ¼ tsp almond extract
Instructions
Boil pistachios for 3 minutes, peel skins, and let dry.
In a microwave-safe bowl, melt butter and milk in 20-second bursts. Add chocolate and stir until smooth.
Blend pistachios, sugar, and salt. Add chocolate mixture and blend until thick and smooth.
Adjust milk for texture. Blend another 30 seconds.
Store in a sealed jar in the fridge for up to 2 weeks.
