Description

Soft, chewy, and nutty pistachio pudding cookies with optional white chocolate chips, perfect for holidays, parties, or everyday treats.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 package (3.4 oz) instant pistachio pudding mix
  • ½ cup softened butter
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ cup white chocolate chips (optional)
  • ¼ cup chopped pistachios (optional)

Instructions

  1. Cream butter with sugars; add eggs and vanilla. Whisk together flour, pistachio pudding mix, and salt; gradually combine with wet ingredients. Fold in optional mix-ins.
  2. Preheat oven to 350°F (175°C). Portion dough into balls and place on lined baking sheet.
  3. Bake 10–12 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to wire rack.
