Description

A fast, flavorful shrimp scampi recipe made with butter, garlic, lemon, and a touch of olive oil. Perfect for busy nights yet elegant enough for special occasions.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 3 tbsp fresh lemon juice
  • ¼ cup chicken broth
  • 1 tsp lemon zest
  • ¼ tsp crushed red pepper flakes
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 8 oz cooked pasta (optional)

Instructions

  1. Heat olive oil and 2 tbsp butter in a skillet over medium heat.
  2. Add shrimp, season with salt and pepper, and cook 1–2 minutes per side. Remove and set aside.
  3. Add remaining butter and garlic; cook 30 seconds.
  4. Stir in broth, lemon juice, zest, and red pepper flakes. Simmer 2–3 minutes.
  5. Return shrimp to skillet, toss with sauce, and cook 1 minute.
  6. Sprinkle with parsley and serve over pasta or with bread.
