Ranch Pepperoncini Chicken

  • Author: angie
  • Total Time: 250 minutes
  • Yield: 4 servings 1x

Description

A tender chicken dish combined with zesty ranch flavors and a delightful kick from pepperoncini peppers, perfect for busy weeknight dinners.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 jar (16 oz) pepperoncini peppers, drained and sliced
  • 1 cup chicken broth or stock
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 teaspoon smoked paprika for a smoky flavor
  • Optional: swap chicken breasts for thighs for a richer texture
  • Optional: hot pepperoncini or diced jalapeños for spice
  • Optional: 1/2 cup cream cheese or sour cream for creaminess

Instructions

  1. Start by prepping your ingredients. Drain and slice the pepperoncini peppers before measuring out your chicken broth and ranch seasoning.
  2. In a large slow cooker, drizzle the olive oil to coat the bottom and sprinkle salt, pepper, garlic powder, and onion powder over the oil.
  3. Next, place the chicken breasts into the slow cooker without browning them.
  4. Sprinkle the ranch seasoning evenly over the chicken.
  5. Add the sliced pepperoncini peppers and pour in the chicken broth.
  6. Cover the slow cooker and set it to low for 240 minutes or high for 120 minutes. Alternatively, transfer to a baking dish, cover tightly with foil, and bake at 375°F for 45-60 minutes.
  7. Once the chicken is cooked through (internal temperature should reach 165°F), shred or slice it in the pot for maximum flavor absorption.
  8. Finally, serve it hot, garnished with fresh parsley.

Notes

To avoid overcooking the chicken, always check for doneness with a meat thermometer. Serve with rice, mashed potatoes, or in tortillas for a complete meal.
