Ingredients

- 4 cups of stale bread, cut into cubes
- 2 cups of fresh rhubarb, chopped
- 2 cups of milk
- 1 cup of heavy cream
- 4 large eggs
- 1 cup of sugar
- 1 tablespoon of vanilla extract
- 1 teaspoon of ground cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chopped rhubarb and about 1/4 cup of sugar in a bowl and let it sit for 10 minutes.
- Whisk together the eggs, remaining sugar, vanilla extract, milk, heavy cream, cinnamon, and salt until smooth.
- Spread the bread cubes evenly in a greased 9×13 inch baking dish. Pour the rhubarb mixture over the bread.
- Pour the custard mixture over the bread, ensuring all the bread is soaked.
- Let it rest for 30 minutes.
- Bake for 40-45 minutes until golden brown and set.
- Cool for a few minutes before serving.
Notes
Consider serving with whipped cream or a sweet cream sauce. This dish can be made healthier with whole grain bread or vegan substitutes.
