Description

This rhubarb custard kuchen combines tart rhubarb, creamy custard, and a tender buttery crust. Perfect for brunch, dessert, or a sweet snack, it’s easy to make with simple pantry ingredients.

  • 3 cups fresh rhubarb, chopped
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cold butter
  • 3 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the crust by combining flour, butter, and salt; press into a greased 9-inch pan. Toss rhubarb with 1/4 cup sugar.
  2. Whisk eggs, milk, remaining sugar, and vanilla until smooth. Pour a thin layer over the crust, add rhubarb, then pour remaining custard over rhubarb.
  3. Bake 40–45 minutes until custard is set and top is lightly golden. Cool completely, chill if desired, and serve.
