- 3 cups fresh rhubarb, chopped
- 3/4 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup cold butter
- 3 large eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Prepare the crust by combining flour, butter, and salt; press into a greased 9-inch pan. Toss rhubarb with 1/4 cup sugar.
- Whisk eggs, milk, remaining sugar, and vanilla until smooth. Pour a thin layer over the crust, add rhubarb, then pour remaining custard over rhubarb.
- Bake 40–45 minutes until custard is set and top is lightly golden. Cool completely, chill if desired, and serve.
