  • 12 mini sweet peppers (red, yellow, or orange for color)
  • 8 oz goat cheese (softened)
  • 1/4 cup cream cheese (softened; optionally can use Greek yogurt for a healthier twist)
  • 1 garlic clove (minced)
  • 2 tablespoons fresh chives (chopped; you can replace with green onions or parsley)
  • 1 tablespoon fresh thyme leaves (optional for added flavor)
  • Salt and pepper to taste
  • Olive oil (for drizzling)
  • Optional: crushed red pepper flakes (for a hint of heat)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the mini peppers by cutting them in half lengthwise and removing the seeds.
  3. Combine the softened goat cheese, cream cheese (or Greek yogurt), minced garlic, chives, and thyme in a mixing bowl.
  4. Fill each mini pepper half with the cheese mixture using a spoon or piping bag.
  5. Arrange the stuffed peppers on a baking sheet lined with parchment paper and drizzle with olive oil.
  6. Roast in the preheated oven for about 20-25 minutes, or until the peppers are tender and the tops are golden.
  7. Let them cool for a couple of minutes before serving.
