- 12 mini sweet peppers (red, yellow, or orange for color)
- 8 oz goat cheese (softened)
- 1/4 cup cream cheese (softened; optionally can use Greek yogurt for a healthier twist)
- 1 garlic clove (minced)
- 2 tablespoons fresh chives (chopped; you can replace with green onions or parsley)
- 1 tablespoon fresh thyme leaves (optional for added flavor)
- Salt and pepper to taste
- Olive oil (for drizzling)
- Optional: crushed red pepper flakes (for a hint of heat)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the mini peppers by cutting them in half lengthwise and removing the seeds.
- Combine the softened goat cheese, cream cheese (or Greek yogurt), minced garlic, chives, and thyme in a mixing bowl.
- Fill each mini pepper half with the cheese mixture using a spoon or piping bag.
- Arrange the stuffed peppers on a baking sheet lined with parchment paper and drizzle with olive oil.
- Roast in the preheated oven for about 20-25 minutes, or until the peppers are tender and the tops are golden.
- Let them cool for a couple of minutes before serving.
Notes
These stuffed mini peppers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months before baking.
