A creamy, smoky roasted red pepper aioli that elevates sandwiches, roasted vegetables, and grilled dishes. Easy to make at home with simple ingredients.

- 1 cup roasted red peppers (fresh or jarred, drained)
- ½ cup mayonnaise (or Greek yogurt for lighter version)
- 1–2 garlic cloves, minced
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: ¼ teaspoon smoked paprika
- Optional: pinch of cayenne pepper
Instructions
- Roast red peppers until charred, then peel and remove seeds.
- Blend roasted peppers, mayonnaise, garlic, lemon juice, salt, and pepper until smooth.
- Adjust thickness with water or olive oil, chill at least 30 minutes, and serve.
