- 4–5 lb beef roast (top sirloin, eye of round, or rump roast)
- 3–4 cloves garlic, minced or sliced
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 2 tbsp olive oil or melted butter
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tsp onion powder (optional)
Instructions
- Preheat oven to 450°F.
- Pat roast dry and rub with olive oil or butter, garlic, rosemary, thyme, salt, and pepper.
- Optional: Insert garlic slivers into small cuts in the roast.
- Roast at 450°F for 15–20 minutes, then reduce to 325°F.
- Cook until internal temperature reaches desired doneness (130–135°F for medium-rare).
- Rest for 20–30 minutes before slicing.
- Slice against the grain and serve with pan juices or au jus.
