- 1 pound smoked sausage or kielbasa, sliced
- 1 pound fresh green beans, trimmed
- 2 pounds baby potatoes or red potatoes, quartered
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- 2 tablespoons butter, melted
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- 1. Preheat oven to 400°F.
- 2. Wash and trim green beans, removing any tough ends. Scrub potatoes and cut into quarters. Slice sausage into half-inch rounds.
- 3. In a large mixing bowl, combine potatoes, green beans, and sliced sausage.
- 4. Add olive oil, melted butter, minced garlic, Italian seasoning, paprika, salt, pepper, and onion powder to the bowl.
- 5. Toss everything together thoroughly until all pieces are well-coated with oil and seasonings.
- 6. Transfer mixture to a 9×13-inch baking dish and spread in an even layer.
- 7. Cover dish tightly with aluminum foil and bake for 30 minutes.
- 8. Remove foil and continue baking for 20-25 minutes until potatoes are fork-tender and edges are golden-brown.
- 9. Garnish with fresh parsley if desired and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months. Reheat in microwave or 350°F oven until heated through. Great for meal prep and potlucks.
