Description

Indulge in these sweet and crunchy Scotcheroo Bites, featuring creamy peanut butter, crispy rice cereal, and a delicious chocolate layer.


Ingredients

  • 1 cup of granulated sugar
  • 1 cup of light corn syrup
  • 1 cup of smooth peanut butter
  • 6 cups of crispy rice cereal
  • 1 cup of chocolate chips
  • ½ cup of butterscotch chips (optional)
  • A pinch of salt

Instructions

  1. Prepare a 9×13 inch baking dish by greasing it lightly or lining it with parchment paper.
  2. Combine the sugar and corn syrup in a saucepan over medium heat, stirring until it starts to bubble.
  3. Remove from heat and quickly add in the peanut butter and salt, stirring until smooth.
  4. Pour the crispy rice cereal into a large mixing bowl and add the peanut butter mixture, stirring to coat evenly.
  5. Transfer the mixture to the prepared baking dish and press it down gently with a spatula.
  6. Microwave the chocolate and butterscotch chips until melted and smooth, stirring in between.
  7. Spread the melted chocolate mixture over the pressed cereal base and create swirls if desired.
  8. Cool at room temperature for a few minutes and then refrigerate for about 30 minutes to set.
  9. Cut into squares or bars and serve or store for later enjoyment.

Notes

For a vegan version, use vegan chocolate chips and maple syrup instead of corn syrup.
