Ingredients

- 1 cup of granulated sugar
- 1 cup of light corn syrup
- 1 cup of smooth peanut butter
- 6 cups of crispy rice cereal
- 1 cup of chocolate chips
- ½ cup of butterscotch chips (optional)
- A pinch of salt
Instructions
- Prepare a 9×13 inch baking dish by greasing it lightly or lining it with parchment paper.
- Combine the sugar and corn syrup in a saucepan over medium heat, stirring until it starts to bubble.
- Remove from heat and quickly add in the peanut butter and salt, stirring until smooth.
- Pour the crispy rice cereal into a large mixing bowl and add the peanut butter mixture, stirring to coat evenly.
- Transfer the mixture to the prepared baking dish and press it down gently with a spatula.
- Microwave the chocolate and butterscotch chips until melted and smooth, stirring in between.
- Spread the melted chocolate mixture over the pressed cereal base and create swirls if desired.
- Cool at room temperature for a few minutes and then refrigerate for about 30 minutes to set.
- Cut into squares or bars and serve or store for later enjoyment.
Notes
For a vegan version, use vegan chocolate chips and maple syrup instead of corn syrup.
