Salmon & Vegetables

  • 4 salmon fillets (6 oz each, skin-on or skinless)
  • 1 lb baby potatoes, halved
  • 12 oz fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Lemon Garlic Butter Sauce

  • 6 tbsp butter, melted
  • 4 cloves garlic, minced
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ½ tsp paprika (optional)
  • 1 tsp honey or maple syrup (optional)
  • 2 tbsp fresh parsley, chopped (optional garnish)

Optional Add-Ons

  • 1 cup cherry tomatoes
  • 1 bunch asparagus, trimmed
  • Pinch of red pepper flakes (for mild heat)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat salmon dry. Arrange salmon and vegetables on a sheet pan.
  3. Toss vegetables with olive oil, salt, and pepper.
  4. Whisk melted butter, garlic, lemon juice, lemon zest, paprika, and honey.
  5. Drizzle butter sauce over salmon and vegetables.
  6. Bake 15–18 minutes until salmon flakes easily and vegetables are tender.
  7. Garnish with parsley and optional lemon wedges. Serve hot.
