- 4 salmon fillets (6 oz each, skin-on or skinless)
- 1 lb baby potatoes, halved
- 12 oz fresh green beans, trimmed
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Lemon Garlic Butter Sauce
- 6 tbsp butter, melted
- 4 cloves garlic, minced
- 3 tbsp fresh lemon juice
- 1 tsp lemon zest
- ½ tsp paprika (optional)
- 1 tsp honey or maple syrup (optional)
- 2 tbsp fresh parsley, chopped (optional garnish)
Optional Add-Ons
- 1 cup cherry tomatoes
- 1 bunch asparagus, trimmed
- Pinch of red pepper flakes (for mild heat)
Instructions
- Preheat oven to 400°F (200°C).
- Pat salmon dry. Arrange salmon and vegetables on a sheet pan.
- Toss vegetables with olive oil, salt, and pepper.
- Whisk melted butter, garlic, lemon juice, lemon zest, paprika, and honey.
- Drizzle butter sauce over salmon and vegetables.
- Bake 15–18 minutes until salmon flakes easily and vegetables are tender.
- Garnish with parsley and optional lemon wedges. Serve hot.
