- 1 lb ground beef (or turkey/chicken)
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 cup frozen peas
- 4 cups beef or chicken broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 4 tbsp butter (for mashed potatoes)
- ½ cup milk
- 3 large potatoes, peeled & chopped
Instructions
- Prepare Base: Sauté onions, carrots, celery, and garlic. Brown ground beef, then add tomato paste, Worcestershire sauce, and broth. Simmer 15–20 mins.
- Cook Soup: Season with salt, pepper, and optional herbs. Add peas last 5 minutes.
- Make Mashed Potatoes: Boil potatoes until tender, mash with butter and milk. Spoon on top of soup before serving
