  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 12 tbsp red food coloring (gel or liquid)
  • 2 tbsp all-purpose flour
  • 5 tbsp butter, melted
  • 1 1/2 cups chocolate cookie crumbs

Instructions

  1. Preheat oven to 325°F (163°C). Prepare the crust by mixing cookie crumbs and melted butter, pressing into a 9-inch springform pan. Bake for 10 minutes, then cool.
  2. In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix in eggs one at a time gently.
  3. Add cocoa powder, flour, and red food coloring until smooth. Pour over cooled crust and bake 55–65 minutes until center slightly jiggles. Cool gradually and chill before serving.
