- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs, room temperature
- 2 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- 1–2 tbsp red food coloring (gel or liquid)
- 2 tbsp all-purpose flour
- 5 tbsp butter, melted
- 1 1/2 cups chocolate cookie crumbs
Instructions
- Preheat oven to 325°F (163°C). Prepare the crust by mixing cookie crumbs and melted butter, pressing into a 9-inch springform pan. Bake for 10 minutes, then cool.
- In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix in eggs one at a time gently.
- Add cocoa powder, flour, and red food coloring until smooth. Pour over cooled crust and bake 55–65 minutes until center slightly jiggles. Cool gradually and chill before serving.
