- 2 tablespoons olive oil
- 1 1/2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika

- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fresh lime juice
Instructions
- Season chicken with olive oil, spices, salt, and pepper.
- Cook chicken in a skillet over medium heat for 5–6 minutes per side until fully cooked. Rest, then slice.
- In a large bowl, combine lettuce, tomatoes, beans, corn, onion, and cilantro.
- Add sliced chicken and drizzle with lime juice. Toss gently and serve.
