A refreshing blend of strawberries, crunchy elements, and a tangy dressing, perfect for summer gatherings.
Ingredients
Scale
- 4 cups fresh strawberries, hulled and sliced
- 2 cups mixed greens (like spinach and arugula)
- 1 cup cucumber, sliced thinly
- 1 cup granola or crushed cereal for crunch
- ½ cup feta cheese or goat cheese, crumbled
- ½ cup almonds or walnuts, chopped (optional)
- ¼ cup red onion, thinly sliced (optional)
- Fresh mint leaves for garnish
- ⅓ cup balsamic vinegar
- ¼ cup extra virgin olive oil
- 2 tablespoons honey or agave syrup

Instructions
- Begin by preparing your strawberries. Rinse them under cold water, then hull them and slice them to your desired thickness.
- Next, take your mixed greens and wash them thoroughly to remove any dirt or debris.
- In a large mixing bowl, combine the sliced strawberries, mixed greens, and cucumber.
- Now, sprinkle in the granola or crushed cereal.
- Crumble the feta cheese or goat cheese over the salad, then add the chopped almonds or walnuts if using.
- For the dressing, whisk together balsamic vinegar, olive oil, honey, salt, and pepper in a separate bowl.
- Lastly, add mint leaves on top for garnish.
Notes
For a healthier version, substitute mixed greens with kale or use Greek yogurt instead of cheese.
