Muffin Batter:

- 1 cup fresh strawberries, diced
Cream Cheese Filling:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
Streusel Crumb Topping:
- ½ cup all-purpose flour
- ⅓ cup brown sugar
- ¼ cup cold unsalted butter
- ½ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.
- Mix dry ingredients for batter; combine wet ingredients separately, then fold together. Gently fold in strawberries.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fill muffin cups halfway with batter, add cream cheese filling, then cover with remaining batter.
- Mix streusel ingredients until crumbly and sprinkle on top.
- Bake 22-25 minutes or until golden. Cool slightly before serving.
