Muffin Batter:

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ½ cup whole milk
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, diced

Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Streusel Crumb Topping:

  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • ¼ cup cold unsalted butter
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.
  2. Mix dry ingredients for batter; combine wet ingredients separately, then fold together. Gently fold in strawberries.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. Fill muffin cups halfway with batter, add cream cheese filling, then cover with remaining batter.
  5. Mix streusel ingredients until crumbly and sprinkle on top.
  6. Bake 22-25 minutes or until golden. Cool slightly before serving.
