Sweet, tangy, and fluffy, these Strawberry Lemonade Cupcakes are perfect for any occasion. Easy to make with fresh strawberries, zesty lemon, and creamy frosting.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 1 cup fresh strawberries, chopped or pureed
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • Frosting: ½ cup unsalted butter, 2 cups powdered sugar, ¼ cup strawberry puree, 1 tbsp lemon juice, optional lemon zest

Instructions

  1. Preheat oven to 350°F (175°C) and line 12-cup muffin pan with liners. Mix dry ingredients, cream butter and sugar, add eggs, lemon juice, vanilla, then fold in strawberries and milk.
  2. Divide batter into liners and bake 18–22 minutes until toothpick comes out clean. Cool on wire rack.
  3. Beat frosting ingredients until smooth, frost cooled cupcakes, and garnish with strawberries or lemon zest.
