Description
Refreshing homemade frozen treats combining sweet strawberries with tangy lemon juice for the perfect summer dessert
Ingredients
- Fresh strawberries, hulled and halved – 2 cups
- Fresh lemon juice – 1/2 cup
- Granulated sugar – 1/2 cup
- Water – 1 cup
- Lemon zest – 1 tablespoon
- Honey – 2 tablespoons
Instructions
- 1. Blend strawberries with half the sugar until completely smooth, about 30-45 seconds. Strain through fine-mesh sieve if desired for smoother texture.
- 2. In separate bowl, whisk together lemon juice, remaining sugar, water, honey, and lemon zest until sugar dissolves completely, about 2 minutes.
- 3. Pour one-third of strawberry mixture into popsicle molds, followed by a layer of lemonade mixture.
- 4. Freeze for 30 minutes, then add another layer of strawberry mixture. Repeat layering process.
- 5. Insert popsicle sticks when mixture is slushy (after about 1 hour of freezing).
- 6. Freeze for 4-6 hours or overnight until completely solid.
- 7. Run warm water over outside of molds for 10-15 seconds to release popsicles easily.
Notes
Store in freezer bags with parchment paper between popsicles for up to 3 months. Can substitute frozen strawberries (thawed and drained) when fresh aren’t available. Adjust sweetness to taste before freezing.
