Description

Refreshing homemade frozen treats combining sweet strawberries with tangy lemon juice for the perfect summer dessert


Ingredients

  • Fresh strawberries, hulled and halved – 2 cups
  • Fresh lemon juice – 1/2 cup
  • Granulated sugar – 1/2 cup
  • Water – 1 cup
  • Lemon zest – 1 tablespoon
  • Honey – 2 tablespoons

Instructions

  1. 1. Blend strawberries with half the sugar until completely smooth, about 30-45 seconds. Strain through fine-mesh sieve if desired for smoother texture.
  2. 2. In separate bowl, whisk together lemon juice, remaining sugar, water, honey, and lemon zest until sugar dissolves completely, about 2 minutes.
  3. 3. Pour one-third of strawberry mixture into popsicle molds, followed by a layer of lemonade mixture.
  4. 4. Freeze for 30 minutes, then add another layer of strawberry mixture. Repeat layering process.
  5. 5. Insert popsicle sticks when mixture is slushy (after about 1 hour of freezing).
  6. 6. Freeze for 4-6 hours or overnight until completely solid.
  7. 7. Run warm water over outside of molds for 10-15 seconds to release popsicles easily.

Notes

Store in freezer bags with parchment paper between popsicles for up to 3 months. Can substitute frozen strawberries (thawed and drained) when fresh aren’t available. Adjust sweetness to taste before freezing.
