- 2 cups fresh strawberries, sliced
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
- 2 tsp vanilla extract
- 1 tsp lemon zest
Instructions
- Preheat oven to 350°F (175°C). Prepare shortcake crust by mixing flour, sugar, and melted butter; press into a 9-inch springform pan and bake 10–12 minutes.
- Beat cream cheese until smooth, gradually add sugar, then eggs, sour cream, heavy cream, vanilla, and lemon zest. Pour over cooled crust.
- Bake at 325°F (160°C) for 50–60 minutes. Cool at room temperature, then refrigerate 4 hours. Top with fresh strawberries before serving.
Notes
- Adjust sugar for sweeter strawberries.
- For mini cheesecakes, use muffin tins and reduce baking time to 20–25 minutes.
