Description

Ingredients

  • 24 oz cream cheese, softened
  • 2 cups fresh strawberries, sliced
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 2 tsp vanilla extract
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Prepare shortcake crust by mixing flour, sugar, and melted butter; press into a 9-inch springform pan and bake 10–12 minutes.
  2. Beat cream cheese until smooth, gradually add sugar, then eggs, sour cream, heavy cream, vanilla, and lemon zest. Pour over cooled crust.
  3. Bake at 325°F (160°C) for 50–60 minutes. Cool at room temperature, then refrigerate 4 hours. Top with fresh strawberries before serving.

Notes

  • Adjust sugar for sweeter strawberries.
  • For mini cheesecakes, use muffin tins and reduce baking time to 20–25 minutes.
