Ingredients

  • 4 cups fresh watermelon, cubed
  • 2 cups fresh strawberries, hulled and halved
  • 3 tablespoons raw honey
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh mint leaves, chopped
  • 1/2 cup crumbled feta cheese (optional)
  • 1 pinch sea salt
  • 1 teaspoon lime zest

Instructions

  1. 1. Wash all fruits thoroughly under cool running water. Cut watermelon into 1-inch cubes and hull strawberries, cutting them in halves or quarters.
  2. 2. In a small bowl, whisk together honey, lime juice, and lime zest until well combined.
  3. 3. In a large serving bowl, gently combine watermelon cubes and strawberry pieces.
  4. 4. Drizzle the honey-lime dressing over the fruit and toss gently to coat without crushing the fruit.
  5. 5. Sprinkle fresh chopped mint leaves throughout the salad and toss lightly.
  6. 6. If using, add crumbled feta cheese just before serving.
  7. 7. Garnish with whole mint leaves and additional lime zest if desired.
  8. 8. Serve immediately or chill for 15-20 minutes before serving.

Notes

Store cut fruits separately from dressing for up to 2 days. Once combined, consume within 24 hours. For best results, add mint and feta just before serving. Can be customized with basil, blueberries, or goat cheese.
