A vibrant summer salad combining juicy watermelon and sweet strawberries with a light honey-lime dressing and fresh mint. Perfect for hot days, picnics, and barbecues.

- 4 cups fresh watermelon, cubed
- 2 cups fresh strawberries, hulled and halved
- 3 tablespoons raw honey
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh mint leaves, chopped
- 1/2 cup crumbled feta cheese (optional)
- 1 pinch sea salt
- 1 teaspoon lime zest
Instructions
- 1. Wash all fruits thoroughly under cool running water. Cut watermelon into 1-inch cubes and hull strawberries, cutting them in halves or quarters.
- 2. In a small bowl, whisk together honey, lime juice, and lime zest until well combined.
- 3. In a large serving bowl, gently combine watermelon cubes and strawberry pieces.
- 4. Drizzle the honey-lime dressing over the fruit and toss gently to coat without crushing the fruit.
- 5. Sprinkle fresh chopped mint leaves throughout the salad and toss lightly.
- 6. If using, add crumbled feta cheese just before serving.
- 7. Garnish with whole mint leaves and additional lime zest if desired.
- 8. Serve immediately or chill for 15-20 minutes before serving.
Notes
Store cut fruits separately from dressing for up to 2 days. Once combined, consume within 24 hours. For best results, add mint and feta just before serving. Can be customized with basil, blueberries, or goat cheese.
