Soft, chewy, and nutty sugar free peanut butter cookies that are easy to bake with simple ingredients. A guilt-free treat for snack time or dessert.

- 1 cup natural peanut butter (unsweetened)
- 1/2 cup sugar-free sweetener (erythritol, monk fruit, or stevia)
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- Optional: 1/4 cup sugar-free chocolate chips or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix peanut butter, sugar-free sweetener, egg, and vanilla until smooth. Fold in optional chocolate chips or nuts.
- Form 1-inch balls of dough and place on baking sheet. Press with fork in a crisscross pattern.
- Bake for 10–12 minutes until edges are lightly golden. Let cool 5 minutes on sheet before transferring to a wire rack.
- Store in airtight container for up to 1 week or freeze up to 3 months.
