Description

Soft, chewy, and nutty sugar free peanut butter cookies that are easy to bake with simple ingredients. A guilt-free treat for snack time or dessert.


Ingredients

  • 1 cup natural peanut butter (unsweetened)
  • 1/2 cup sugar-free sweetener (erythritol, monk fruit, or stevia)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: 1/4 cup sugar-free chocolate chips or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix peanut butter, sugar-free sweetener, egg, and vanilla until smooth. Fold in optional chocolate chips or nuts.
  3. Form 1-inch balls of dough and place on baking sheet. Press with fork in a crisscross pattern.
  4. Bake for 10–12 minutes until edges are lightly golden. Let cool 5 minutes on sheet before transferring to a wire rack.
  5. Store in airtight container for up to 1 week or freeze up to 3 months.
