Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup sweet chili sauce
  • 1 tablespoon soy sauce (low-sodium preferred)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup cucumber, sliced thinly
  • 1 cup lettuce leaves (romaine or butter lettuce)
  • 4 large tortillas (whole wheat or flour)
  • Optional toppings: chopped cilantro, sesame seeds, or sliced jalapeños

Instructions

  1. Begin by preparing your chicken. If you haven’t already cooked it, boil, grill, or sauté chicken breast or thighs in olive oil until fully cooked. Shred the chicken using two forks.
  2. In a large mixing bowl, combine the shredded chicken, sweet chili sauce, soy sauce, and lime juice. Toss until the chicken is well coated.
  3. Heat a non-stick skillet over medium heat. Add a splash of olive oil, then toss in the red bell pepper and shredded carrots. Sauté for about 5 minutes.
  4. Once your vegetables are ready, add the chicken mixture to the skillet. Stir and heat for an additional 2-3 minutes until warmed through.
  5. While the filling is heating, warm your tortillas in a separate pan for about 30 seconds on each side or use a microwave.
  6. To assemble, lay a tortilla flat on a plate. Place a scoop of the chicken and vegetable mixture down the center, then add fresh lettuce and any optional toppings.
  7. Wrap it up by folding the sides over the filling and rolling from the bottom. Cut in half diagonally for presentation.

Notes

Consider using grilled tofu for a vegetarian version and gluten-free tortillas as a substitute.
