- 2 lbs (about 4 medium) sweet potatoes
- 2–3 tbsp olive oil
- 2 tbsp unsalted butter, melted
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp maple syrup (or honey)
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp cayenne pepper (adjust to taste)
- ½ tsp chili powder
- Fresh parsley or green onions for garnish
Instructions
- Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper.
- Scrub and cut sweet potatoes into 1½-inch rounds. Boil until fork-tender (15–20 minutes).
- Drain and arrange on the baking sheet. Use a glass bottom to gently smash each round.
- Mix olive oil, butter, salt, pepper, paprika, cayenne, chili powder, and garlic powder. Brush over potatoes.
- Roast for 20–25 minutes, flipping halfway.
- Mix maple syrup and butter to create a glaze. Brush over potatoes, then broil for 1–2 minutes until caramelized.
- Garnish with parsley or green onions and serve warm.
