Description

Taco Pasta Salad is a quick, easy, and flavorful dish combining pasta, fresh vegetables, seasoned protein, and creamy dressing. Perfect for weeknight dinners, potlucks, or meal prep.


Ingredients

  • 8 oz pasta (elbow, rotini, or shells)
  • 1 cup cooked protein (ground beef, turkey, chicken, or black beans)
  • 1 cup diced bell peppers
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup diced red onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tsp taco seasoning
  • Salt and pepper, to taste
  • Optional: crushed tortilla chips for topping

Instructions

  1. Cook pasta until al dente, drain, and cool slightly. Prepare protein and chop vegetables.
  2. In a large bowl, combine pasta, protein, vegetables, corn, and shredded cheese. Toss gently.
  3. Whisk mayonnaise, sour cream, taco seasoning, salt, and pepper. Pour over salad, toss to coat, and chill 30 minutes. Add tortilla chips before serving if desired.

Notes

  • Swap proteins or veggies for variety. Use Greek yogurt for a lighter dressing or add jalapeños for extra spice.
