Taco Pasta Salad is a quick, easy, and flavorful dish combining pasta, fresh vegetables, seasoned protein, and creamy dressing. Perfect for weeknight dinners, potlucks, or meal prep.

- 8 oz pasta (elbow, rotini, or shells)
- 1 cup cooked protein (ground beef, turkey, chicken, or black beans)
- 1 cup diced bell peppers
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/4 cup diced red onion
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tsp taco seasoning
- Salt and pepper, to taste
- Optional: crushed tortilla chips for topping
Instructions
- Cook pasta until al dente, drain, and cool slightly. Prepare protein and chop vegetables.
- In a large bowl, combine pasta, protein, vegetables, corn, and shredded cheese. Toss gently.
- Whisk mayonnaise, sour cream, taco seasoning, salt, and pepper. Pour over salad, toss to coat, and chill 30 minutes. Add tortilla chips before serving if desired.

- Swap proteins or veggies for variety. Use Greek yogurt for a lighter dressing or add jalapeños for extra spice.
