- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 1/2 cups all-purpose flour
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas with a fork until smooth.
- Stir in the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract into the banana mixture.
- Sprinkle the baking powder and then add the flour.
- Line a muffin tin with paper liners or grease it well.
- Bake in your preheated oven for 20-25 minutes.
- Allow the muffins to cool in the pan for about 5 minutes before transferring them to a cooling rack.
Notes
Use overripe bananas for the best flavor. Avoid overmixing to keep muffins fluffy.
