- 1 lb fresh green beans, trimmed and blanched
- 2 cups diced Yukon Gold or red potatoes, parboiled
- 1 cup condensed cream of mushroom soup
- 1/2 cup butter or ghee
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- Salt, pepper, and pinch of nutmeg to taste
- 1 cup breadcrumbs or fried onions for topping
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onions and garlic in butter until golden.
- Mix green beans, potatoes, sautéed onions and garlic, soup, and cheese in a large bowl.
- Pour mixture into a greased casserole dish.
- Top with breadcrumbs or fried onions.
- Bake for 25–30 minutes until bubbly and golden on top.
