Ingredients

  • 4 slices of good-quality bread (sourdough, rustic, or gluten-free)
  • 2 medium ripe tomatoes, sliced
  • 8 ounces fresh mozzarella cheese, sliced
  • A handful of fresh basil leaves, torn or whole
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • Balsamic glaze (for drizzling, optional)
  • Red pepper flakes (for a spicy kick, optional)

Instructions

  1. Preheat your oven’s broiler or toaster oven.
  2. Prepare your bread. Lay the slices on a baking sheet and brush them lightly with olive oil.
  3. Place it under the broiler for about 2-3 minutes.
  4. Remove the toast from the oven and rub with minced garlic, if using.
  5. Layer the mozzarella on top of each piece of toast, followed by the tomato slices.
  6. Sprinkle with salt and pepper, then add the basil leaves.
  7. Return the toast to the oven for another 2-4 minutes until the cheese is melted.
  8. Drizzle with balsamic glaze or sprinkle with red pepper flakes if desired.
