- 4 slices of good-quality bread (sourdough, rustic, or gluten-free)
- 2 medium ripe tomatoes, sliced
- 8 ounces fresh mozzarella cheese, sliced
- A handful of fresh basil leaves, torn or whole
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced (optional)
- Salt and pepper to taste
- Balsamic glaze (for drizzling, optional)
- Red pepper flakes (for a spicy kick, optional)
Instructions
- Preheat your oven’s broiler or toaster oven.
- Prepare your bread. Lay the slices on a baking sheet and brush them lightly with olive oil.
- Place it under the broiler for about 2-3 minutes.
- Remove the toast from the oven and rub with minced garlic, if using.
- Layer the mozzarella on top of each piece of toast, followed by the tomato slices.
- Sprinkle with salt and pepper, then add the basil leaves.
- Return the toast to the oven for another 2-4 minutes until the cheese is melted.
- Drizzle with balsamic glaze or sprinkle with red pepper flakes if desired.
Notes
Use fresh, in-season tomatoes and basil for best flavor. For healthier alternatives, consider whole grain bread or plant-based mozzarella.
