Description

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 12 ounces pasta (spaghetti, linguine, or fettuccine)
  • 2 tablespoons olive oil (or butter)
  • 3 garlic cloves, minced
  • 4 cups fresh spinach
  • 2 cups diced tomatoes (fresh or canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons fresh basil, chopped (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a skillet and sauté shrimp for 2–3 minutes per side until pink. Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds, then add diced tomatoes and tomato paste. Simmer 5–7 minutes.
  4. Add fresh spinach and cook until wilted. Season with salt, pepper, and red pepper flakes.
  5. Return shrimp to the skillet, add pasta, and toss everything together. Use reserved pasta water to loosen sauce if needed.
  6. Finish with lemon juice, Parmesan, and fresh basil before serving.

Notes

  • Customize with cream for a richer sauce or add vegetables like bell peppers and zucchini.
  • Store leftovers in an airtight container for up to 2 days; reheat gently with a splash of water or broth.
  • Gluten-free pasta works as a substitute.
