Description

A refreshing summer salad combining sweet watermelon, crisp cucumber, and tangy feta cheese with fresh mint and a light citrus dressing. Perfect for picnics, barbecues, and hot weather dining.


Ingredients

  • 6 cups seedless watermelon, cubed
  • 2 cups English cucumber, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper, freshly ground

Instructions

  1. 1. Cut the watermelon into 1-inch cubes and place in a large serving bowl, patting dry with paper towels if needed.
  2. 2. Slice the cucumber into half-moons or rounds and add to the bowl with the watermelon.
  3. 3. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper until well combined.
  4. 4. Add the crumbled feta cheese and thinly sliced red onion to the watermelon and cucumber mixture.
  5. 5. Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
  6. 6. Sprinkle the chopped fresh mint leaves over the top of the salad.
  7. 7. Serve immediately for best texture and flavor, or chill for up to 30 minutes before serving.

Notes

This salad is best served fresh and chilled. Store any leftovers in an airtight container in the refrigerator for up to 24 hours. Drain excess liquid before serving leftovers. For meal prep, keep components separate and assemble just before serving.
