Description

A creamy, protein-packed salad with eggs, avocado, spinach, and a zesty homemade dressing. Perfect for post-workout fuel or a quick, nutritious lunch.


Ingredients

  • 4 large eggs
  • 1 large ripe avocado
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 2 tbsp red onion, finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped parsley or cilantro

Instructions

  1. Boil eggs, then cool in ice water and peel.
  2. Dice avocado, chop vegetables, and toss spinach in a large bowl.
  3. Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper; drizzle over salad.
  4. Slice eggs and arrange on top. Sprinkle parsley or cilantro. Serve immediately or chill briefly.

Notes: Keep dressing separate if prepping ahead to prevent soggy greens.
