- 4 large eggs
- 1 large ripe avocado
- 2 cups baby spinach
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 2 tbsp red onion, finely chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp chopped parsley or cilantro
Instructions
- Boil eggs, then cool in ice water and peel.
- Dice avocado, chop vegetables, and toss spinach in a large bowl.
- Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper; drizzle over salad.
- Slice eggs and arrange on top. Sprinkle parsley or cilantro. Serve immediately or chill briefly.
Notes: Keep dressing separate if prepping ahead to prevent soggy greens.
